Nasi Goreng Kampung Recipe – Spicy Malay Fried Rice with Ikan Bilis

## Ingredients

- 2 cups cooked white rice (preferably day-old)

- 2 tbsp cooking oil

- 1/2 cup ikan bilis (fried anchovies)

- 3 cloves garlic, minced

- 2 shallots, sliced

- 2 bird’s eye chilies, chopped

- 1 egg

- A handful of kangkung (optional)

- Salt and soy sauce to taste

- Cucumber slices and fried egg for garnish


## Instructions

1. Heat oil in a wok over medium-high heat.

2. Sauté garlic, shallots, and chilies until fragrant.

3. Add ikan bilis and stir-fry until crispy.

4. Push ingredients aside and crack in an egg. Scramble lightly.

5. Add in the rice and mix thoroughly.

6. Season with salt and soy sauce.

7. Toss in kangkung if using. Stir until wilted.

8. Serve hot with cucumber slices and a fried egg on top.
