Nasi Ayam Recipe – Juicy Malaysian Chicken Rice with Garlic Chili Sauce

If you love Hainanese chicken rice, wait till you try Nasi Ayam, the beloved Malaysian version! With fragrant chicken-flavored rice, juicy poached chicken, and spicy garlic chili sauce, this dish is a national treasure. Learn how to make this comforting meal at home with our easy Nasi Ayam recipe.

## Ingredients

### For the Chicken:

- 1 whole chicken (1.5kg), cleaned

- 2 inches ginger, smashed

- 4 cloves garlic

- Salt to rub


### For the Rice:

- 2 cups jasmine rice, rinsed

- 2 tbsp chicken fat or oil

- 3 cloves garlic, minced

- 1 inch ginger, minced

- 3 cups chicken broth (from poaching)


### For the Garlic Chili Sauce:

- 5 red chilies

- 3 cloves garlic

- 1 inch ginger

- 2 tbsp chicken broth

- 1 tbsp lime juice

- 1 tsp sugar

- Salt to taste


### Optional Garnish:

- Sliced cucumber

- Soy sauce & sesame oil mix

- Spring onions


## Instructions

### 1. Poach the Chicken:
1. Rub chicken with salt and rinse. 
2. In a large pot, boil water with garlic and ginger.
3. Submerge chicken and simmer for 45 minutes.
4. Remove chicken, brush with soy + sesame oil, and set aside.
5. Reserve chicken broth.

### 2. Prepare the Rice:
6. In a pan, heat chicken fat/oil.
7. Sautรฉ garlic and ginger until fragrant.
8. Add rinsed rice and stir-fry for 2 minutes.
9. Transfer to rice cooker, add chicken broth, and cook.

### 3. Make the Chili Sauce:
10. Blend all ingredients until smooth.
11. Taste and adjust lime, salt, or sugar.

### 4. Serve:
12. Chop the chicken into pieces.
13. Plate rice with chicken, cucumber slices, and chili sauce.
14. Optionally, drizzle soy-sesame mixture over chicken.
