What is Murtabak?

Murtabak is a beloved street food classic in Malaysia — a stuffed pancake or pan-fried bread filled with spiced minced meat, onions, and eggs, folded in a thin dough and fried to perfection. Popular during Ramadan and late-night food stalls, this savory delight packs bold flavors in every bite.

For the dough:

  • 2 cups all-purpose flour

  • 1/2 tsp salt

  • 3/4 cup water (adjust as needed)

  • 2 tbsp vegetable oil

  • Extra oil for coating

For the filling:

  • 300g minced beef or chicken

  • 1 large onion (diced)

  • 2 garlic cloves (minced)

  • 1 tsp curry powder

  • 1 tsp garam masala

  • Salt and pepper to taste

  • 2 eggs

Optional sides:
Pickled onion and cucumber salad, sambal, or curry gravy

1. Prepare the Dough

  • In a large bowl, mix flour and salt.

  • Gradually add water while kneading until a soft, elastic dough forms.

  • Coat with oil, cover, and let rest for 2 hours.

2. Cook the Filling

  • In a pan, heat a little oil and sautรฉ garlic and onions until fragrant.

  • Add minced meat, curry powder, garam masala, salt, and pepper.

  • Cook until meat is browned and slightly dry. Let cool, then mix in beaten eggs.

3. Assemble the Murtabak

  • Divide dough into 4 balls. Flatten each ball thinly (like a roti canai).

  • Place filling in the center. Fold sides like an envelope to seal.

  • Heat a flat pan with a little oil and fry murtabak until golden brown on both sides.

  • Slice into squares. Serve hot with pickled vegetables or curry sauce on the side.
