200g yellow noodles (blanched)

1 potato, boiled & cubed

1 handful of mustard greens (sawi) or bean sprouts

1 egg

2 pcs fried tofu, sliced

1 tbsp chili paste (sambal or blended chilies)

1 tbsp sweet soy sauce (kicap manis)

1 tbsp light soy sauce
-
1 clove garlic, minced
-
1 tbsp tomato sauce (optional)

Lime, green chili, fried shallots (for garnish)
๐จ๐ณ Step-by-Step Instructions:
Step 1: Prep the Base
Blanch noodles briefly and set aside. Prep tofu, potato, and vegetables.
Step 2: Build Flavor
Heat oil in wok. Sautรฉ garlic and chili paste until fragrant.
Step 3: Stir-Fry
Push garlic aside, crack in egg and scramble slightly. Add noodles, tofu, potatoes.
Step 4: Sauce It Up
Add soy sauce, sweet soy, and a splash of water or tomato sauce. Toss everything quickly over high heat.
Step 5: Add Veggies
Add mustard greens or bean sprouts. Stir-fry until just wilted.
Step 6: Serve Hot
Plate the noodles. Squeeze lime, top with green chili and crispy shallots.
